Pressure Cooker Carnitas

Ingredients


4 pounds pork shoulder, trimmed and cut into chunks
1   28 ounce can Las Palmas green chili enchilada sauce, Mild or Medium your choice.
1/4  cup fresh chopped Cilantro
1/2 cup shredded carrots  (Optional)
2 tablespoons dried Mexican oregano
1 tablespoon ground cumin
1 tablespoon ground Corriander
1 yellow onion cut into wide strips
4 cloves of fresh garlic

Instructions

The following instructions are written for the Instant Pot 6 Qt. pressure cooker.
For other brands and models of pressure cookers, read the manufacturer’s instruction manual for your model to learn how to best set your brand and model of Pressure Cooker.

Place all ingredients in the pot of your pressure cooker except the pork.  Stir to combine the ingredients.   Place pork in the pot and stir to cover all the pork.  All the pork chunks should be covered with the sauce.

Press the “Meat/Stew” button and change the time to 90 minutes.  Due to the large volume of this recipe, it will take 15 to 20 minutes to come up to pressure.  When estimating time, be sure to add this to the 90 minute cook time.

When the meat is done, shred the meat and serve in burritos, tacos, tostadas, or enchiladas.  Or just eat it with tortillas.

Leftovers can be portioned and frozen for later use.
