Pistachio Cake
Ingredients
1 (18.25 ounce) package white cake mix
3/4 cup of coconut oil OR vegetable oil
1 cup lemon-lime flavored carbonated beverage
3 eggs
2 (3 ounce) packages instant pistachio pudding mix
2 (1.25 ounces) envelopes whipped topping mix
1 1/2 cups of unsweetened coconut milk OR cow’s Milk
Instructions
Step 1 Preheat the oven to 325 degrees F or 165 degrees C
Step 2 Mix white cake mix, oil, lemon-lime soda, eggs, and add ONE
package of pudding mix. Make sure to evenly and carefully beat
all ingredients until smooth.
Step 3 Bake pistachio cake for about 45 minutes.
Step 4 Test cake to see if it is done. Insert a knife with the
thinnest blade into the center of the cake. If the knife comes
out clean, the cake is done.
Step 5 Place the cake pan on a rack and let it cool.
Step 6 Finally, beat the whipped topping mix, milk, and ONE pudding
mix until stiff. Pour the mixture evenly over the fully cooled
cake. Refrigerate.
