Ham Balls
Ground Hamburger and ground Ham meatballs in a tangy sauce.

Ham Balls
1 pound ham center slices, ground
1 pound ground beef
2 eggs
1 cup cornflakes crushed
1/2 to 2/3 cup milk
Salt to taste
1 large can pineapple chunks in juice, reserve the juice

Sauce
1 1/2 cups brown sugar firmly packed
1 cup white vinegar
1 cup pineapple juice reserved
2 teaspoons mustard

Pre heat oven to 400°

Ground ham is hard to find.  Buy center ham slices, or use left over ham from the holidays,
and grind it in a food processor using the pulse button.

Mix the ground ham, ground beef, eggs, crushed corn flakes, salt (if desired), and 1/2 cup milk.
The best way to mix is to squish it together with your hand.  If necessary, add more milk until the desired consistency is achieved.  Should be the same consistency of a meat loaf.
Form into approximately 2 inch balls, and place in 13 X 9 inch baking dish.  Place one pineapple cube on each ham ball.

Mix together the brown sugar, white vinegar, pineapple juice, and mustard, then pour over
the ham balls.

Bake one hour at 400°

Lessons Learned:
The Sauce portion of the recipe is doubled from the original recipe.  We found that the extra
Sauce kept the ham balls moister, and they absorbed more of the flavor of the sauce this way.
