Chili con Carne

Ingredients

2 pounds ground beef
5 cloves garlic crushed
1 tablespoon whole cumin seed
1 15-ounce can tomato sauce
1 16-ounce jar salsa
1 14.5 ounce can diced tomatoes w/ garlic, oregano, basil with juice
1 large yellow onion finely chopped
2 cans red kidney beans rinsed and drained
Salt to taste
Fresh ground pepper to taste
1 tablespoon oregano
1 spice packet from caroll shelbys chili mix
2 tablespoons Worcestershire sauce
10 ounces ketchup
1/4 pound bacon cooked and crumbled (Optional)

Instructions

Put the 2 pounds of hamburger or diced beef in a large pot.  Cover with water.  Add the crushed garlic and cumin seeds.  Bring to a boil, and boil until the meat is well browned and the seasonings have cooked in.

Dump meat into a strainer and rinse with hot tap water to remove excess grease.  Don't rinse to excess, just enough to remove the majority of the grease.

Return the meat to the pot, and add the remaining ingredients.  Add water until the chili is kind of thin, so it can cook down.

Bring to simmer, then simmer until the chili has a good body, stirring frequently.

Optional.  Just before serving, mix masa flour packet from the Carroll Shelby's Chili Mix with water per package instructions.  Stir into Chili, heat for 10 minutes to remove the raw taste of the masa.  Then serve.
