Calico Beans
A medley of beans makes a colorful casserole.
Calico Beans
1/4 pound bacon
1 pound ground beef
1/2 cup onions chopped
1/2 cup brown sugar firmly packed
1/2 cup ketchup
2 tablespoons apple cider vinegar
2 tablespoons yellow mustard
1 teaspoon salt
1 15-ounce can lima beans do NOT drain, dump in juice and all
1 15-ounce can kidney beans do NOT drain, dump in juice and all
1 15-ounce can pork and beans do NOT drain, dump in juice and
all
Pre-heat oven to 350°
Dice bacon and saute' until some fat has melted.
Add ground beef and onion and saute' until ground beef is
browned.
Put bacon, ground beef, and onions into a 13 X 9 inch baking
dish.
Add remaining ingrediants and mix well. Do NOT drain any
of the beans,
just open the cans and dump them in juice and all.
Bake at 350° for 1 1/2 hours.
Lessons learned:
Baking uncovered for 1 1/2 hours dried out the surface of the
cassarole especially
but also made the whole cassarole a little dry for our tastes.
To prevent this we cover the baking dish with aluminum foil and
bake 1 hour covered, remove
the foil and bake 1/2 hour uncovered. This doesn't dry it
out as much.
